I’m lucky that one of my best friends is a fantastic home cook and adores hosting parties with close friends; sharing her prized wines, designing a stunning spread and sending us home with a generous portion of to-go goodies. Over the last decade that I’ve known Andrea, there is one recipe, in particular, that she has repeated and perfected. That is her ribs! Andrea takes care in every step of the process and has agreed to share her technique with us.

Agh, I’m one of those bloggers who has been neglecting her writing duties. I always wondered who those people were and now I’m one. Dang it! Good thing Pure Food Fish  continues to ask me to do recipes for their site as it prompts me to write about it on mine.

PFF wanted me to do something creative with Branzino, a fish that I became very familiar with last year when we spent the majority of the year near on the Mediterranean coast. In Croatia and Montenegro this was the go-to fish on every menu. Branzino is technically the Northern Italian (Branzini is just the plural) name given to this mild tasting white fish. Other names that might be familiar to you are European or Mediterranean seabass.

As most of us are well informed, in order to feed the masses and reap huge financial benefits, short cuts occur which not only affect our physical health but radically deplete our resources and hurt the environment as well. From a producer’s perspective, it’s not easy to make quality products in a space where the marketing voice across the nation comes from Tyson Foods, Monsanto and Smithfield Foods.

This week I watched Vegucated, an insightful documentary addressing common practices in our farm animal industry and meat processing. The perspective is from a vegan who selects three devoted meat eaters in New York and has them follow a vegan diet for a few weeks while educating them on the US meat industry during that time. I chose to watch it as I’m on a food learning binge for Eat Seattle’s educational side. I have no intention of being a devoted vegan or vegetarian but I’m certainly moved to avoid mass industry meat as much as possible. And it isn’t easy…with this in mind I decided to come up with a moist and flavorful veggie burger recipe.
